Bad Inspections for Boca Indian & Hashi Sushi Thai

We were excited about the opening of Boca Indian Grill in Mission Bay and so it’s a bigger disappointment to have to write about their first bad inspection. They “lead” this report with 26 violations including 6 marked high priority from a routine inspection in late July.
To be fair, some of the violations were picky, related to how they have moved around furniture and buffet tables without getting government approval first. And their follow-up inspection 2 days later was near perfect.
The 6 big violations were:

  • Cooked potentially hazardous (time/temperature control for safety) food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. – in walk n cooler covered tightly – cooked chicken 98° after 3 hours.
  • Evidence of mop/cleaning wastewater dumped onto ground. – operator stated that mop buckets were dumped outside , indicating outside the back door.
  • Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. BUFFET LINE – fish stew 120° chicken tikka 113° carrot pudding 118° okra marsala 115°
  • Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. – the 3 compartment sink quaternary ammonium dispenser has nothing hooked up to it. the dispenser line is placed into the floor drain. There is no knowledge by person in charge or DIshmachine operator as to what quaternary ammonium is, or what a sanitizer test kit is.
  • Raw meat/poultry cold held at greater than 41 degrees Fahrenheit. WALK IN COOLER – raw chicken marinating 54° cheese/vegetaalls balls 53° raw chicken 54° AMBIENT TEMPERATURE 45°
  • Self-service hot and cold buffet lacking adequate sneezeguards or other proper protection from contamination. – cease buffet until there is sneeze/cough guard protection for all displayed foods. Covers for chafing dishes do not provide sneeze/cough guard protection as the food is unprotected when sneeze/couch protection is most needed.

We went there today for the lunch buffet and asked if they had any comment on the inspection. They did not get back to us.
As for today’s meal, Chicken Tikka Masala is their most popular item and it was good today as was most of the food. However the Tandoori Chicken was surprisingly bland.
We have had dinner there a few times and the portion sizes are noticeably small for an Indian restaurant, though this is obviously not a problem at the lunch buffet.

Right behind with 25 violations was Hashi Sushi Thai in Shadowood. Four were high priority including a stop sale:

  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. – Fresh garlic in oil held unrefrigerated on cookline at 67°. Operator, trying to explain time in lieu of temperature said, ” two hour back in cooler out two hour back in cooler two hour”. – REACH IN COOLER – (iced igloo cooler) mussels 60° red snapper 58° talaria 57° scallops 37° Krab 37° – REACH IN COOLER – shrimp 50° (cooling from improper thawing).
  • Potentially hazardous (time/temperature control for safety) food held using time as a public health control not discarded at the end of the 4-hour/6-hour period. See stop sale. – operator thinks he is using time as a public health control for garlic but does not understand the concept. Attempted to explain to him and instructed him regarding a written approved plan before this can be approved.
  • Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. REACH IN COOLER – (iced igloo cooler) mussels 60° red snapper 58° talapia 57°
  • Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. – Rear exterior. **Repeat Violation**

The other bad inspection goes to Brendy’s in Polo Club Shoppes, which was temporarily closed in late July for roaches:

Roach activity present as evidenced by live roaches found. When inspector moved an empty folded cardboard box from between freezer equipment in rear area, multiple live roaches scurried across the floor. They were fast moving and too to acquire an exact count. There were 20 + live roaches observed.
