No Mercy for Gramercy: Roach Closure Again

Gramercy Bagels and Deli in Delray was closed again for roaches on the 19th. The inspection report showed 23 violations including 9 high priority:

  • All potentially hazardous (time/temperature control for safety) foods i at greater than 41 degrees Fahrenheit…..Sausages , cheese , ham, cut tomato , mushroom , smoked salmon,blintzes , waffle batter 50°/53° below stove , grill in cook line . …..butter 52°, cream cheese 52° in reach in cooler below toaster in server station at kitchen .Food being held more than 4 hours . Stop sale issue . Pic discarded food.
  • Live, small flying insects, 4 flies in kitchen.
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit…..cut tomato 58°, Cole slaw 50°, cut lettuce 63°, meat loaf 48°, potato cakes 48° being held less than 4 hours ( pic moved food to walk in cooler ) waffle batter 61° being held more than 4 hours in flip top coolers in cook line .   • Raw animal food not properly separated from ready-to-eat food….raw shall above lintel soup in walk in cooler . Pic separated it. **Corrected On-Site**
  • Raw animal food stored over or with ready-to-eat food in walk-in freezer – not all products commercially packaged..raw salmon top of open spinach in walk in freezer. **Corrected On-Site**
  • Roach activity present as evidenced by live roaches found…..2 live roaches in server station, 2 live roaches in cook line floor, one live roach on the prep table in kitchen. **Repeat Violation**
  • Small flying insects. Numerous small flying insects around drains in storage area and bagel prep area.
  • Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse…..see stop sale report.

As we reported a couple weeks ago, Gramercy was also closed for roaches on October 5th. We’re actually more concerned by the stop sales.

The biggest number closer to home was for Anthony’s Coal Fired Pizza in the Boca Grove plaza on Powerline. It wasn’t terrible but 9 violations with 3 high priority isn’t great either. Bonefish Grill in the same plaza also got hit – maybe worse – with 7 violations, 5 of which were high priority:

  • Cooked meats or poultry hot held at less than 135 degrees Fahrenheit or above. – on cook line white sauce 120° garlic sauce – steam table plugged in. **Corrective Action Taken**
  • Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. – in kitchen then.
  • Employee handled soiled dishes or utensils and then handled clean dishes or utensils without washing hands. – Dishmachine operator.
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Diced boiled eggs, cut tomatoes at 48F on the flip top reach in cooler by the heat lamp, operator put lids on.
  • Thermotape failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. – failed on each of five cycles.

The best local inspection goes to Outback Steakhouse on SW 18th, with just 2 minor violations. Sicilian Oven did okay with 2 violations including 1 high priority. The popular Shake Shack on Glades had 3 minor violations.

Chinese Top Inspection Report

Two Chinese restaurants in West Boca had the most violations in this week’s inspection report. China Cafe in Loggers’ Run had the biggest overall number with 15 violations. Three were marked high priority:

  • Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. – observed manual ware-washing taking place without sanitizer step.
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. – cooked shrimp is 47°on wok line cold table is double panned in cold table and stacked high in lexan pan. Other foods on cold temperature are within temperature compliance. Shrimp placed in single metal pan and placed on cold table as other foods. **Corrective Action Taken**
  • Raw animal food stored over ready-to-eat food. In WALK IN COOLER – raw shell eggs above a soy sauce and caca cola

China Wok in Sandalfoot Square was second on the list with 13 violations, 1 of them high priority.

Others with 10 or more violations include:

  • Hotdog-opolis in East Boca (12 violations, 3 high priority)
  • Gyromania (11, 4) and Sushi Yama (11, 0) in the Garden Shops plaza on Palmetto
  • Duffy’s on Hillsboro (10, 3)
  • Brooklyn Water Bagel and Brighton Beach Bagel (each 10, 2) on Military Trail in Delray
  • Pita N Go on 441 near Sandalfoot (10, 3)

The “Italians” had some of the best inspections this week. Pizza Hut Delivery on St. Andrews near Town Center had a perfect inspection. City Boys Pizza on Sandalfoot and Sal’s Italian in Garden Shops on Palmetto were both near perfect with one minor violation each. Brick Yard Microbrewery near Sal’s also had only one minor violation.

Gramercy Bagels & Deli on Jog in Delray was closed temporarily by inspectors after they found live roaches. The report indicated a total of 19 violations with 4 high priority:

  • Employee failed to wash hands before changing gloves and/or putting on gloves to work with food….discussed with operator. **Corrected On-Site**
  • Employee touching ready-to-eat food with their bare hands – food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure……cutting bagel with bare hand . Pic discarded bagel than washed hands putting gloves to next bagel prepared. **Corrected On-Site**
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit….cut tomato 65°, cut lettuce 53°, egg wash 55° in flip top cooler in cook line, butter 72° in bagel station temperature control in ice , cream cheese 54° in reach in cooler in bagel station . food being held less than 4 hours , some food time marked , some move to freezer. **Corrective Action Taken** **Repeat Violation**
  • Roach activity present as evidenced by live roaches found….approximately over 20 live roaches in reach in cooler gaskets in cook line….1 live roach on the floor at beneath grill in cook line…..1 live roach in gasket in front line reach in cooler.

The other big numbers this week go to Curbside Cafe on Del Prado Circle (17 violations, 5 high priority), and the main kitchen at Boca Country Club (13, 4).

There were a couple near-perfect inspections including Tricky Dick’s Pub in Sandalfoot and Jersey Mike’s Subs on Yamato in East Boca. There were also two near-perfect licensing inspections for Boca Indian Grill in Mission Bay and for the new Los Bocados on 441 in Parkland.

Roaches at Denny's Again

Roaches led to another temporary closure of the Denny’s on Federal Highway in East Boca. We previously reported they were shut down earlier this month.
On September 23rd inspectors found:

Dead roaches on premises. 1 dead roach and 2 roach casings on ground by bread rack in dishwashing area and 2 dead roaches under counter in milkshake station. Areas cleaned up. **Corrected On-Site**
Roach activity present as evidenced by live roaches found. 4 live roaches in employee break room near walkin cooler, 1 live roach on wall near handwash sink in dishwashing area and 1 live roach under counter at milk shake station in front counter area.

As with two weeks earlier, the restaurant reopened the same day after a better inspection. They did not have a big number of violations, with only seven, but a roach closure is a big deal.
Overall it was a good week with only a few restaurants logging 10 or more violations. Most notable on the high side were Uncle Tai’s on Military Trail (12 violations, 3 high priority) and Rocco’s Taco’s (10 violations, 2 high priority) in the same plaza.

On the good news side of things, our favorite pizza place had a near perfect inspection with only two minor violations. We have been fans of Stella’s for years and are pleased to see this.
Other good inspections were recorded by:
Burger King on Glades near the Turnpike (2 violations, 1 high priority)
La Ferme on Yamato at Lakeridge (3, 1)
And in other big news, Junior’s in Mizner Park had their licensing inspection and had only one minor violation. From Facebook it appears they opened today.

Whale Fail? 27 Violations in Restaurant Inspection Report

The Whale Raw Bar leads off our latest restaurant inspection report with a total of 27 violations. This is a double whammy for the restaurant, which had a shooting just a couple weeks ago.
Four of the violations were marked high priority:

  • All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Chicken ,burger, fish 46-48°F. Operator transfer to walk in cooler. **Corrective Action Taken**
  • Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Cook not washing hands before putting gloves on. **Corrected On-Site**
  • Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Shrimp chowder,clam chowder , Loster soup found 120°, operator increase temperature on steam table. **Corrective Action Taken**
  • Toxic substance/chemical stored by or with clean or in-use utensils. WD40 stored with clean utensils. **Corrected On-Site**

Their follow-up inspection the next day still had 12 violations, one of them high priority.
Davinci’s of Boca in Town Center only had 9 violations but 6 of them were high priority including a stop sale:

  • Cooked potentially hazardous (time/temperature control for safety) food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours, Osso buco 48°-49°. Chef stated food cooled since last night, over 6 hours. (See Stop Sale)
  • Employee touching ready-to-eat food with their bare hands – food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure, server plating bread. **Corrected On-Site**
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit, Cheese, butter, squid ink, cooked eggplant, all between 48° and 50°. True unit across from salamander. All TCS food in cooler since last night. (See stop Sale)
  • Raw animal food stored over ready-to-eat food, raw salmon and cooked octopus in same container on cookline. **Corrected On-Site**
  • Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse.
  • Wiping cloth sanitizer solution exceeds the maximum concentration allowed, test strip tuned black immediately.
