Hong Kong Wrong: Restaurant Inspections

Hong Kong Palace leads off our restaurant inspection report with 23 total violations. It’s not as bad as that sounds since only two of the violations were marked as high priority:

Clams/mussels/oysters cold held at a temperature greater than 41 degrees Fahrenheit. REACH IN COOLER – (Cook Line Cold Table) chicken pieces 57° raw chicken 58° raw beef 58° mini-corn 59° REACH IN COOLER – (Opposite Deep Fryers) egg rolls 58° **Corrective Action Taken** – foods relocated to walk in cooler.
Heated potentially hazardous (time/temperature control for safety) food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. – fried rice on counter all afternoon at 65°

The next biggest number was for Bird Nest Tree Restaurant on Military Trail in Delray Beach. They had 14 violations including 5 high priority:

  • All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Hot line service cooler – eggs rolls 47°, pork ribs 48°, sweet and sour chicken 47°. Operator states all TCS food were hoed under 4 hours and moved to walk in cooler. **Corrective Action Taken**
  • Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Tested at over 200ppm. Operator corrected to 100ppm. **Corrected On-Site**
  • Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Operator contacted company to order sanitizer.
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Bean sprouts 64° left out at room temperature moved to cooler. **Corrected On-Site**
  • Shell eggs held at room temperature with an ambient air temperature greater than 45 degrees Fahrenheit. Under 2 hours moved to cooler. **Corrective Action Taken**

In the good news, a new restaurant in Town Center called Sliderz had a perfect licensing inspection.
They are planning to have a smart phone app that will allow “guests to place their order from within the mall.” Their food is made with “grass-fed meats, line-caught fish, free-range chicken all free of antibiotics and hormones.”
Chick Fil A in the mall and Domino’s on Powerline both had perfect routine inspections.
Near perfect inspections (1 minor violation) were recorded by Jon Smith Subs in Mission Bay, Juice & Java on St. Andrews, and Yogurt Rendezvous on Beracasa.

Sergio’s in Northwest Sandalfoot Plaza (10, 1)
Apura and Cannoli Kitchen on Powerline each had 11 violations.
