Mushy Sushi – Restaurant Inspections
An East Boca sushi place had the worst inspection this week with 8 high priority violations. A West Boca Asian restaurant was in second-worst place.
There was some good news including for a couple of ice cream places frequented by West Boca residents.
Ichiyami Buffet and Sushi had 16 violations including 8 marked high priority, including:
- Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Krab 52-71F and eel 75Funder no temperature control in sushi bar area. Food moved to cooler to quick chill. **Corrective Action Taken**
- Potentially hazardous (time/temperature control for safety) food held using time as a public health control marked with a time that exceeds the 4-hour limit. Sushi rice and all other items on buffet held under time. Foods time marked.
- Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. JB tempura roll 125F under no temperature control in sushi bar area. Placed inside cooler to quick chill. **Corrective Action Taken**
- Raw animal food stored over ready-to-eat food. Unwashed mushrooms over prepped veggies at walk-in cooler. Foods moved. Raw shrimp and squid over soy sauce at walk-in cooler. **Corrected On-Site**
- Raw animal foods not properly separated from one another based upon minimum required cooking temperature in walk-in freezer – all products not commercially packaged. Raw chicken over raw beef . Foods moved. **Corrected On-Site** *
- Self-service salad bar/buffet lacking adequate sneezeguards or other proper protection from contamination. Green onions and fried noodles unprotected at buffet. Under no sneeze guard protection. Items moved and properly stored. **Corrective Action Taken**
- Wiping cloth sanitizer solution exceeds the maximum concentration allowed.at 0ver 200 ppm chlorine. Corrected to 100 ppm chlorine.
Shanghai City in Lakeside Terrace (plaza south of Glades Road Turnpike interchange) had 12 violations, 2 of them high priority. And in the same plaza, City Fish Market had 8 violations, 5 high priority:
- Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. – Tested on THREE cycles at 0 PPM.
- Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded.
- Operator unable to provide documentation that aquacultured fish has been raised in a controlled environment and fed formulated feed.
- Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. – salmon 49F, mahi mahi 47F sword 46F. – all drawers iced down. **Corrective Action Taken**
- Ready-to-eat, potentially hazardous (time/temperature control for safety) food marked with a date that exceeds 7 days after opening/preparation. In WALKIN COOLER – – Spicy Tomado 9-16 – Black Sauce 10-05 – Garlic Aiole 10-06 – Payches 10-6 – Blue Cheese 10-10
Millers Ale House on Yamato near Broken Sound and New York Prime near Glades and Butts each had 6 violations, two high priority.
Perfect
The popular Cherry Smash Ice Cream on Wiles in Coral Springs had a perfect inspection with zero violations. Aerojuice in the Polo Club Shoppes was also perfect.
A few places were close to perfection. Fresh Kitchen on Military Trail had one violation. There were two violations each for Melting Pot on Federal Highway, Chill-N Nitrogen Ice Cream in Woodfield Plaza, and La Luna in Polo Club Shoppes.
Original Pancake House on Glades at Lyons did well with three minor violations, and First Watch in Mission Bay had five minor violations.
