We previously reported that a new French restaurant will be opening on Yamato. To find out more we reached out to the contractors working on the place and they apparently forwarded our inquiry. So we just received a response from the Executive Chef, William Walden.
OLYMPUS DIGITAL CAMERAThe short version: They are aiming to open in late January. Chef Walden has an impressive background, and that’s not just him saying so. We researched him and we agree. The menu looks spectacular. They will be open six days a week, taking Tuesdays off. They will be open for lunch, but not right away.
He made a point to talk about “the interior and the lush fabrics, and French inspired design by Shuster Design Associates.”
Here are excerpts from his message:

We will feature Modern American French Country Cuisine with a Farm to Table emphasis. … Our restaurant is slated to open in late January after very extensive training and total renovation. …
I come from the Washington DC Suburbs of Virginia and have been a long time Chef with over 30 years of experience. I have a consuming passion for excellence and an unparalleled work ethic. The Food will be extremely fresh with very careful attention to detail. I have attached a menu sample (see below) that certainly will change often depending on what is again, extremely fresh and available in the markets. I will also seek Rabbinical blessing and offer a Kosher section on the menu abiding by strict guidelines.
We just hired John Iannotti, the former GM of St. Andrews Country Club for over a decade, The Boca Resort and Club, and the former COO of the Fisher Island Resort. Mr. Iannotti will ensure impeccable service throughout our establishment with his years of expertise in the business. We are thrilled to have him join our team.
Notably, in my last endeavor, my restaurant was ranked in the top 10 in DC and VA Suburbs on OpenTable and also the top 100 Restaurants in the entire US for 2 consecutive years. Please Google Chef William Walden. I have participated in television shows, cooking demonstrations, Culinary School judging, and have received very humbly numerous awards in the restaurant business.
I have been swooned to Sunny South Florida here in Boca Raton by my partners who frequented my last restaurant with much enthusiasm and decided that Boca Raton needs something extraordinary. They are notable Foodies with discerning palettes. …
We will have theme dinners, wine tastings, degustation menus, prix-fixe and a la carte menus. We will be open 6 days a week, closed Tuesdays. We will plan on opening 7 days a week in the future. Dinner will be served from 5:00 pm until 9:30 pm weekdays, until 10:30 pm on Fridays and Saturdays. Sunday Champagne Brunch will be served from 11:30 until 2:30 and Sunday Dinner will be served from 4:00 pm until 9:00 pm. We will open for lunch shortly after opening, within a month. Our lunch hours will be Monday through Friday from 11:30 until 2:30 pm. Saturday Lunch will be served from 12 Noon until 2 pm respectively. Again, we will be closed on Tuesdays.
Noteworthy: We will be having 2 weeks training for all staff and 1 week of mock service before opening. … Our phone lines will be live within a couple of weeks. 561-883-2002. Reservations are suggested and recommended.
