Country Club Woes: Restaurant Inspections

It’s a short restaurant inspection report this week, topped off by a prominent country club with nearly 20 violations.

Boca Woods Country Club was hit with 19 violations including 4 marked high priority. The worst of it was:

  • Dead roaches on premises.. one dead roach underneath handwashing at Dishmachine area. Employee cleaned it up at time of inspection. **Corrected On-Site**
  • Heat strip failed to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired… heat strip turned black at time of inspection operator corrected on side . **Corrected On-Site**
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit….cut melon 58°, water chestnuts 44°, cold soup 52°, roasted vegetables 51° ,pasta 52° in the speed rack in tall reach in cooler at prep kitchen by the salad walk in cooler. Food being held less than 4 hours. Chef discarded food at time of inspection..**Corrective Action Taken**
  • Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. ….chicken stock 45° to 52° in walk-in cooler in a dipper than 4 inches container at a walk in . Per chef food was cooked yesterday. See stop sale report . Chef discarded food at time of inspection.
  • Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse…. Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. ….chicken stock 45° to 52° in walk-in cooler in a dipper than 4 inches container at a walk in . Per chef food was cooked yesterday.

Right behind was Pollo Tropical in the Lowe’s plaza with 17 violations.

Better results were reported for Villagio in Mizner Park (5 violations, 2 high priority), Tomasso’s on Palmetto Park Road (4, 1), and La Nouvelle Maison in East Boca (4, 0).
