Royal Restaurant Roaches: Inspection Report

Inspectors were busy the past two weeks. The biggest news is roaches found in Royal Palm restaurant, along with another one in the plaza with over 30 violations. This report covers 52 inspections.

Tanjore in Royal Palm Place was temporarily closed after roaches were found on July 1st, along 32 violations, 7 of them high priority.

The dead roaches were considered a basic violation:

Dead roaches on premises. 34 dead roaches under 3 compartment sink by cookline 1 dead roach under prep table in frontline area 1 dead roach by stove at cookline. 3 dead roaches under dry storage shelving near employee restroom

The high priority violations included live roaches and more:

  • Roach activity present as evidenced by live roaches found. 3 live roaches under 3 compartment sink by cookline 3 live roaches by utensils storage rack near kitchen entryway 1 live by handwash sink at cookline 3 live roaches at cookline by stove
  • Cooked potentially hazardous (time/temperature control for safety) food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Rice pudding at prep 1:41pm at 124° (cooling) to 112F at 3:45 at room temperature on shelf at prep table. Food sent to be reheated to 165° to begin cooling process again in walk in cooler. **Corrective Action Taken**
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Yogurt 45° at reach in cooler at cookline. Operator removed to cooler to quick chill . **Corrective Action Taken**
  • Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Cooked beans 109° at buffet. Food discarded Cooked beans 84° at front line. Food reheated to over 165F. **Corrected On-Site**
  • Raw animal food stored over ready-to-eat food. Raw shrimp over sauce at flip top cooler at end of cook line. Food moved and properly stored. **Corrected On-Site**
  • Self-service salad bar/buffet lacking adequate sneezeguards or other proper protection from contamination.
  • Toxic substance/chemical stored by or with food. butane fuel stored next to potato in dry store area. Chemical removed. **Corrected On-Site**

Saquella Cafe in the same plaza had even bigger numbers, with 34 violations and 11 high priority.

  • Container of medicine improperly stored. Bottle of pain killer by sugar at wait station.
  • Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly at 0ppm. Corrected to 50ppm Chlorine. **Corrected On-Site**
  • Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee washed knife at 3 compartment sink and then handled clean utensils and prepared food without washing hands first. Employee washed hands
  • Employee touched face/hair and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee scratched face and then handled clean utensils without washing hands first. Employee washed hands
  • Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. No sanitization step observed when washing knife at 3 compartment sink. Only washing and rinsing observed.
  • Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Dessert cooler : volcano home made dessert 54°, and Cannoli 54° in front counter area. Cannoli in cooler overnight. Cannoli not maintaining 41F or below for longer than 4 hours. See Stop sale. Volcano in cooler for about 2 hrs, moved to walk-in cooler to quick chill. Salmon at flip top by stove : 51°, melon 46°, waffle mix 51° Items over stacked. Operator removed excess and moved to inside of cooler for quick chill. Sausage 71° and cut tomato 50°.mushroom 67°. Held at cook line at room temperature. Operator moved to cooler for quick chill Cooked potatoes 71° at cook line on speed rack under no temperature control. Moved to walkin cooler to quick chill. Flip top by flat top: cut tomato 47°, mozzarella 50F, red pepper 48°. Food over stacked. Operator moved over stack to inside of cooler for quick chill. **Corrective Action Taken**
  • Potentially hazardous (time/temperature control for safety) food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. For eggs and butter using time at cookline. Operator Time marked.
  • Raw animal food stored over ready-to-eat food. Raw salmon stored on top of prepped carrots at cookline flip top cooler. Food moved and properly stored.
  • Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee answered a phone call with gloves on and then continued cooking eggs without changing gloves and washing hands. Employee changed gloves and washed. Hands. **Corrected On-Site**
  • Spray hose at dish sink lower than flood rim of sink.
  • Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Dessert cooler : volcano home made dessert 54°, and Cannoli 54° in front counter area. Cannoli in cooler overnight. Cannoli not maintaining 41F or below for longer than 4 hours.

Inspectors also reported big numbers (19-23 violations) for Steak N Shake on 441 in Coral Springs, Shinju Buffet on Glades at the Turnpike, El Balcon de las Americas at Sandalfoot and 441, Flakowitz in East Boca, and Casimir Bistro in Royal Palm Place.

Good News

The best news this week is a licensing inspection for a new place – Bento Asian Kitchen and Sushi – on Military Trail north of Yamato. We’re not sure if it’s open yet.

Tijuana Flats in MissionBay did well with just one minor violation.

Game of Zones in Loggers’ Run Plaza had a licensing inspection with 2 minor violations. Roboli at Clint Moore and Jog also had 2 violations.

In the same plaza as the new Bento place, Prezzo and Habit Burger each had 3 violations. Brendy’s Yogurt on Clint Moore at Jog did the same.

Cinebowl in Delray Marketplace had 4 violations in a complaint inspection and then inspectors came back two days later for a routine inspection and found 6 violations. Both results are pretty good.

Other notables this week include:

  • Lemongrass Hotpot in Boca Grove – 13 violations
  • Burger King near Target – 14 violations
  • Gary Rack’s Farmhouse – 15 violations, 8 high priority
